Enjoy these light and spongey maple muffins fresh from the oven or the next day (if they last that long). A simple, straight-forward muffin recipe gets dressed up with a crumble topping reminiscent of coffee cake and just as good! Serve with hot coffee for a sweet start to the day!

 

Maple Syrup Muffins

Yield: 12 muffins

Ingredients

½ cup maple syrup
1 egg
½ cup milk
¼ cup vegetable oil
2 cups flour
2 tsp. baking powder
1 tsp. salt

Directions

  1. Preheat oven to 400º F
  2. Beat egg, milk, maple syrup, and oil with a fork
  3. Sift together dry ingredients and combine with egg mixture
  4. Fill greased muffin cups 2/3 full with batter
  5. Before baking, sprinkle with topping (recipe below) *
  6. Bake for 20-25 minutes

 

*Directions for topping

1/3 cup packed brown sugar
½ tsp. cinnamon
1/3 cup chopped nuts (such as walnuts)
