
Maple Syrup Muffins
Yield: 12 muffins
Ingredients
½ cup maple syrup
1 egg
½ cup milk
¼ cup vegetable oil
2 cups flour
2 tsp. baking powder
1 tsp. salt
Directions
- Preheat oven to 400º F
- Beat egg, milk, maple syrup, and oil with a fork
- Sift together dry ingredients and combine with egg mixture
- Fill greased muffin cups 2/3 full with batter
- Before baking, sprinkle with topping (recipe below) *
- Bake for 20-25 minutes
*Directions for topping
1/3 cup packed brown sugar
½ tsp. cinnamon
1/3 cup chopped nuts (such as walnuts)
