With 20,000 Maple Trees Tapped, Meridan Hill has Organic Syrup on the Way

On January 15, 2020, we successfully ended our tapping season for the year at Meridan Hill! With help from our four-legged Production Manager, Axel, we were able to walk 500 of acres to tap approximately 20,000 of our Maple trees.

But who actually knows what tapping is and when the best time to do this? We do! Maple trees are tapped by drilling holes into their trunks and collecting the sap, which is processed by heating to evaporate much of the water, leaving the concentrated syrup. Most trees can produce 5 to 15 gallons of sap per season. Now that our trees are tapped, we do service checks to make sure there isn’t any leaks (or animals trying to break through the lines). We tighten the vacuums and continue to make sure there are no issues that prevent our organic syrup reaching perfection!

Then, the fun really starts and we wait for the sap to flow! Since the sap flowing is dependent on the weather, we usually have to wait until the temperatures are above freezing.
