For Day 14, we’re bringing you a fiery yet sweet Maple Sriracha Chicken that perfectly balances heat with the rich, deep sweetness of 100% organic maple syrup. Maple Sriracha Chicken
(yields 3 servings) Prep Time: 5 mins Cook Time: 30 mins Total Time: 4 hrs 30 mins (includes marinating time)
Ingredients
3 chicken thighs
3 Tbsp. extra-virgin olive oil, divided
1 Tbsp. sriracha
1 Tbsp. low-sodium soy sauce
1/2 tsp. ground cumin
Juice of 1/2 lime or lemon
1 sweet potato, cut into 1" cubes
1 red onion, sliced into half moons
Kosher salt, to taste
Freshly ground black pepper, to taste
Cilantro, for garnish
Directions
Step 1: Marinate the Chicken
In a large bowl, whisk together 2 tablespoons olive oil, organic maple syrup, sriracha, soy sauce, cumin, and lime juice.
Add the chicken thighs and toss to coat evenly.
Cover and let marinate for at least 30 minutes, or up to 4 hours for deeper flavor.
Step 2: Sear the Chicken
Preheat your oven to 425°F.
Heat a large ovenproof skillet over medium-high heat and add the remaining 1 tablespoon olive oil.
Place the chicken thighs in the pan, skin side down, and cook until the skin turns crispy, about 4-6 minutes.
Transfer the chicken to a plate.
Step 3: Cook the Vegetables
In the same skillet, add sweet potatoes and red onion, seasoning with salt and pepper.
Sauté until the sweet potatoes start to brown and the onion softens, about 5 minutes.
Step 4: Bake to Perfection
Return the chicken to the skillet, skin side up, and pour in any leftover marinade.
Transfer the skillet to the oven and bake until the chicken is fully cooked and the sweet potatoes are tender, about 15 minutes.
Step 5: Garnish & Serve
Sprinkle fresh cilantro over the dish before serving. Pair with lime wedges for an extra citrusy zing!
Notes
For a lower sodium (and soy-free) option, use coconut aminos instead of soy sauce.
If you prefer extra spice, add in more sriracha. If you want it extra sweet, add more maple syrup.
