Maple Pecan Overnight Oats

(yields 1 serving)

Ingredients

  • 1/2 cup rolled oats

  • 1/2 cup unsweetened almond milk (or your preferred milk)

  • 1/4 cup plain Greek yogurt

  • 1 Tbsp. Meridan Hill Maple Farm Organic Maple Syrup (adjust to taste)

  • 1⁄4 tsp. cinnamon

  • 1⁄4 tsp. vanilla extract

  • 2 Tbsp. chopped pecans

  • fresh berries (optional, for topping)

Directions

  1. In a mason jar or bowl, combine the oats, almond milk, Greek yogurt, maple syrup, cinnamon, and vanilla extract.

  2. Stir the mixture until everything is well combined.

  3. Cover and refrigerate overnight (or for at least 6 hours), to allow the oats to soak and soften.

  4. In the morning, give it a good stir, and top with chopped pecans and fresh berries for a crunchy, sweet finish.

  5. Serve cold, and enjoy your maple-infused breakfast!
