Nothing says romance like strawberries and maple syrup! For Day 2 of our 14 Days of Maple Delights, we’re bringing you a twist on a classic dessert: Maple Glazed Strawberry Shortcake. The combination of fluffy biscuits, sweet maple glazed strawberries, and whipped cream makes this the perfect treat to share with someone special.

Maple Glazed Strawberry Shortcake
(yields 6 servings)
Ingredients
For the Shortcakes:
2 cups all-purpose flour
1 Tbsp. baking powder
1⁄4 tsp. salt
3 Tbsp. cold butter, cubed
3/4 cup heavy cream
For the Maple Glazed Strawberries:
2 cups fresh strawberries, sliced
1/4 cup Meridan Hill Maple Farm Bourbon Barrel Aged Maple Syrup (or classic maple syrup)
1 tsp. vanilla extract
For the Whipped Cream:
1 cup heavy whipping cream
1⁄2 tsp. vanilla extract
Directions
Prepare the strawberries:
In a bowl, mix sliced strawberries with bourbon barrel aged maple syrup and vanilla extract. Let them sit for at least 30 minutes to soak up the flavors.
Make the shortcakes:
Preheat your oven to 400°F (200°C).
In a large bowl, whisk together flour, baking powder, and salt.
Cut in the cold butter until the mixture resembles coarse crumbs.
Stir in heavy cream and maple syrup until just combined.
Turn the dough onto a floured surface, gently knead, and pat into a 3/4-inch thickness.
Use a round cutter or glass to cut out biscuits and place them on a baking sheet.
Bake for 12-15 minutes or until golden brown.
Whip the cream:
Beat the heavy cream, maple syrup, and vanilla extract until soft peaks form.
Assemble:
Slice the shortcakes in half. Place the bottom half on a plate and layer with whipped cream, then maple glazed strawberries. Place the other half of the shortcake on top, then add another layer of whipped cream and more strawberries. Drizzle with extra maple syrup for an extra sweet touch.
Notes
For extra flaky shortcakes, handle the dough as little as possible and don’t overmix.
If you prefer a softer shortcake, brush the tops with a little heavy cream before baking.
